Some recipes from this week.

I have been ill for the last few day unfortunately. I did not go to work either but stayed at home. Tomorrow, finally, I want to go back to work, too boring to stay here. Besides, I do not really feel very good not working, quite stressful.
Anyway, since I was home I was a bit lazy. I tried to do something useful though. I cleaned a bit and cooked some. Last 2 days it was mostly cooking time for me :) I have this book with polish recipes so we chose two with S. and I made it. Was a bit time consuming but really tasty and actually easy to do. I made an apple pie first and buckwheat groats balls (like meat balls but without meat.) Both are really tasty, the groat-balls are even better with some sauce, for instance mushroom sauce.

First for the apple pie:

Ingredients:
300 grams of flour
1 tee spoon of baking powder
150 grams of butter
100 grams of sugar.
2 eye yolks
2 spoonfuls of thick cream
2 spoonfuls of semolina

for the filling:
1 kg apples, 150 grams of sugar, some walnuts and cinnamon, you can also buy some spice mix in shops, for instance in Polish shops.

Then :
1. mix the flour with the baking powder, add butter, cugar, yolk and cram. Mix until smooth (try to be quick, otherwise the butter might melt,) form into 2 balls, put for about 30 minutes into the fridge.

In the meantime you can prepare the filling:
wash theapples, peel, remove the seed cores, kut into pieces or grind or pulp it, stir in sugar and nuts. You can also fry the apples on a pan for a while - will taste better.

Coming back to the dough. Take one ball out of the fridge, roll it so that it is about 10 - 20 mm. thick (depending how big your cake form is) The cake form should be flat and not too high. Put a sheet of dough onto the form and cover it lightly with semolina. Put apple-mix onto it, take the other part of dough out of the fridge, roll it flat and cover the cake. Bake for about 45-50 minutes in 180 - 190 degrees.



This is so good, you could sprinkle it with powder sugar too. Greeeeat with coffee.

While baking, you could use the cooker for something else at the same time, I recommend bread or other cake. This is what I did baking some ciabbatta bread. Excellent and we ate it in 2 days :) me more than S :D he he he

Mmmm... Polish apple pie!
It's the best! I don't know about the Scots but Americans eat their apple pies with a scoop of ice cream, and I heartily recommend it!
